Smoked Salt and Thyme Rolls

  • Ingredients 
  • 500g bread flour
  • 10g instant yeast
  • 1 tablespoon white sugar
  • 1 tablespoon fresh thyme leaves, stalks removed
  • 400-500ml warm milk
  • 1 egg, beaten
To make the dough, combine the flour, yeast, sugar, Kustom Spices Smoked Salt and thyme in a large bowl. In a separate bowl, beat the egg into the warm milk (the milk shouldn't be too hot as this will kill the yeast) and add to the flour mixture, stir to combine. Work the dough until it comes together, tip out onto a floured surface and knead for a further 10 minutes until it becomes smooth and elastic.
Place the dough in a greased bowl, cover with cling wrap and allow to rest for approximately 1 hour or until it has doubled in size.
Once the dough is ready, preheat the oven to 180°C and line a baking tray with baking paper. Form 6 medium-sized balls and place on the prepared baking tray. Brush each ball of dough with a little milk and season with more Kustom Spices Smoked Salt. Alternatively place a whole sprig of fresh thyme on each roll.
Place the rolls in the oven and bake for 20 minutes until golden brown and cooked through. Remove and serve warm with butter.
Makes 6 rolls.
